Pumpkin relish with white cheese cubes
A nice Mediterranean recipe. The vegetarian side dish contains the following ingredients: pumpkin, olive oil, pine nuts, white cheese cubes, mint, garlic and lemon juice.

Cut the pumpkin into pieces, peel and grate on a coarse grater (or in a food processor).

Fry 2 tablespoons of oil in frying pan and gently fry pumpkin grater in approx.

10 minutes, stirring regularly.

Drain the pumpkin in the sieve.

Roast pine nuts golden brown in dry frying pan.

Cut cheese cubes into small cubes.

cut fresh mint.

Put pumpkin in bowl.

Peel the garlic and press it over it.

Stir in mint, cheese cubes, 2 tbsp oil and lemon juice.

Season with salt and pepper.

Relish the heating if required again.

Sprinkle pine nuts over it.

Warm or serve at room temperature.

Tasty with warm pita bread (as a starter) or with couscous and roasted chicken..
