Quesadillas with shrimps and guacamole
Mexican quesadilla - tosti - tortilla wraps with kidney bean chilli, prawns in garlic, cheddar cheese and coriander with fresh guacamole
Grate the cheddar cheese and cut the coriander roughly.
Mix half of the coriander through the kidney beans. Sprinkle the tortilla wraps with half of the cheese and spread the kidney beans over it.
Divide the shrimp over it and sprinkle with the rest of the cheese. Cover with the wraps and press lightly.
Heat the frying pans without oil or butter and fry in each pan a quesadilla in 5 min. On medium heat until golden brown. Turn halfway.
Keep warm on a plate under aluminum foil or a lid. Fry the rest of the quesadillas.
In the meantime, prepare the guacamole fresh package with the extra garlic according to the instructions on the packaging. Stir in the rest of the coriander.
Season with pepper and salt. Cut the quesadillas into points and serve with the fresh guacamole.
