In a bowl, beat the eggs with a dash of milk or water, a pinch of salt and pepper. Heat the oil or butter on medium height and pour the eggs into the pan.

Add the ham, raise the heat source and stir gently for about 1 minute with a spatula over the bottom of the pan until the egg is lumpy and still shiny.

Sprinkle with the parsley and serve immediately. Tasty with raisin bread or toasted bread.
