Rack of lamb with salsa verde

A tasty recipe. The main course contains the following ingredients: meat, eggs, garlic, shallot, fresh mint, fresh parsley, coarse mustard, capers, vinegar, (olive) oil, rack of lamb (approx. 350 g), salt and pepper.



  1. Boil eggs in plenty of water and boil hard in about 8 minutes. Then rinse and peel under cold water. Garlic and shallot peel and coarsely cut. Picking mint and parsley leaves from stalks, leaving a few leaves for garnishing. Season the herbs with garlic, shallot, mustard, capers, vinegar and 5 tablespoons of oil in a food processor, add more oil if necessary if the mixture is too thick. Then cut egg finely and stir through salsa. Salsa to taste with pepper and salt.
  2. Preheat oven to 200 ° C or gas oven temperature. 4. Sprinkle rack of lamb with salt and pepper. In a large frying pan heat the remaining oil and lamb racks per 2 pieces in about 5 minutes around brown boxes. Then place meat in frying pan, add shortening to it, and roast rosé in the center of the oven in 15 to 20 minutes. Remove the meat from the oven and leave it for a few minutes. Then cut into slices and serve on hot plates with salsa. Garnish with retained herbs. Serve with baked new potatoes and mixed green lettuce.
