Warm potato endive salad
A tasty recipe. The main course contains the following ingredients: meat, potatoes (pound of lettuce (500 g)), olive oil, chorizo sausage (in slices), endive (bag of 500 g), mustard, mayonnaise and sweet onions (in half rings).

Cook the unpeeled potatoes in plenty of water with salt in 15 minutes until done. Drain, allow to cool slightly and halve the large potatoes.

Heat the oil and fry the chorizo for 6 minutes on a not too high heat. Turn the heat up, add the endive and cook for 2 minutes.

Beat a dressing of mustard and mayonnaise and scoop through the potatoes. Add the endive chorizo mixture and onion and spoon over. Season with salt and pepper. Divide the salad into 4 plates. Delicious with freshly baked multigrain boulogné bread.
