Preheat the oven to 200ºC. Divide the vegetables and potatoes as the colors of the rainbow per type in rows over a baking sheet.

Sprinkle with salt and pepper and sprinkle generously with oil. Place the baking tray in the middle of the oven for 20-25 minutes.
