Chop the shallot very finely.

Prepare the raspberries in a deep plate and rub them over a bowl through a sieve, so that only the seeds remain in the sieve.

Mix the shallot with salt, pepper and the thyme leaves.

Stir in with a whisk through it and then pour in the walnut oil (or extra virgin olive oil).

Continue to beat until it becomes a nicely bonded dressing.

Pour the dressing possibly through a funnel into a clean bottle.
