Ratatouille with salmon fillet
A tasty French recipe. The main course contains the following ingredients: fish, couscous, peeled tomatoes (400 g), olive oil, eggplant (in half slices), zucchini (in half slices), salmon fillet ((frozen), thawed), garlic (squeezed) and dried thyme .

Prepare the couscous according to the instructions on the package. Meanwhile, let the tomatoes drain, collect 2 t of tomato juice from the can and keep separate. Cut the tomatoes into pieces.

Heat 2 tbsp oil in a frying pan and fry the aubergine for 3 min. Add the zucchini and cook for another 4 min.

Heat 2 tbsp oil in another frying pan. Sprinkle the salmon with salt and pepper and fry in 4 minutes until golden brown and just cooked. Turn halfway.

Add the tomatoes, tomato juice, garlic and thyme to the vegetables and fry for 1 min. Season the ratatouille with pepper and salt.

Divide the salmon and ratatouille over 4 plates and serve with the couscous.
