Put the coal in the sieve or colander and pour boiling water over it.

Bring the vinegar with the bay leaf, the cayenne pepper and the mustard to the boil for the dressing. Boil the vinegar to half.

Add the rest of the dressing ingredients and heat without cooking.

Roast the almonds in a dry hot skillet.

Spoon the bell pepper and celery through the cabbage.

Divide the salad into 4 plates. Pour over the dressing and sprinkle the almonds on it.
