A nice Mediterranean recipe. The main course contains the following ingredients: fish, potatoes, zucchini, (roma) tomatoes, dried thyme, freshly ground black pepper, olive oil, redfish fillet (of approx. 125 g) and red pesto.

Directions

  1. Peel potatoes, cut into slices, wash and pre-cook in salted water for 7 minutes.
  2. Preheat the oven to 175 ºC.
  3. Cut the zucchini and tomatoes into thin slices.
  4. Potato slices carefully transfer into colander and let dry.
  5. Place four large pieces of aluminum foil on the work surface.
  6. Potato and zucchini alternately spread over aluminum foil.
  7. Sprinkle thyme, salt and pepper over it and dribble with oil.
  8. Spread redfish fillet on both sides with salt and pepper.
  9. Top thinly with pesto.
  10. Place fish on potato-zucchini stacks.
  11. Cover with tomato.
  12. Fold up packages, fold edges 2 times to prevent leaks.
  13. Place fish packages on baking sheet and let them cook in oven for 20-25 minutes.
  14. Tasty with mixed salad..
