Directions

  1. Preheat the oven to 150 ° C.
  2. Cut the ribs into coarse pieces.
  3. Cut the winter root and the parsnip into slices.
  4. Cut the red onion into pieces.
  5. Mix the pieces of meat in a roasting pan with salt, freshly ground pepper, mustard, thyme and olive oil.
  6. Divide the onion, carrot and parsnips in between and pour the wine and the fond.
  7. Slide the universal pan into the oven and let the meat cook for 2.5-3 hours.
  8. Season the meat occasionally.
  9. If necessary, add more meat stock or stock if it gets too dry.
  10. Tasty with boiled potatoes and sprouts.
