Boil the rice according to the instructions on the package and let it cool down to room temperature in 15 minutes.

Meanwhile, clean the lime, grate the green skin and squeeze the fruit. Mix the lime zest and juice with the chili sauce and sesame oil.

Drain the peppers and cut into small pieces. Cut the spring onion into rings, the apricots into pieces and the coriander coarse.

Spoon the dressing through the rice and season with pepper and salt. Put the peppers, spring onions, apricots, coriander and sesame seeds through.
