Ricotta spinach
A nice Indian recipe. The vegetarian side dish contains the following ingredients: onion, garlic and lime (squeezed out).

Chop the onion. Heat the oil in a frying pan and fry the onion over medium heat for 5 minutes. Meanwhile, finely chop the ginger.

Slice the garlic cloves. Turn down the heat, add the garlic and the ginger and fry for 1 more minute.

Cut the tomato into pieces. Add the curry powder in the frying pan and cook for another 1 min. Add the tomato and stir fry for another 2 minutes.

Raise the heat and add a hand of spinach. Let it shrink. Continue until all spinach has run out. Let it warm for another 2 minutes.

Spoon the ricotta through the spinach. Season to taste with lime juice and pepper and salt. Serve immediately.
