Riser salad
A tasty Dutch recipe. The vegetarian side dish contains the following ingredients: potatoes (Opperdoezer Ronde (bag 2 kg), cleaned), Zaanse mustard (coarsely ground (pot of 335 g)), white wine vinegar, sunflower oil and watercress (75 g).

Cut the potatoes into pieces. Boil them in water with salt in 10 minutes until al dente.

Meanwhile, make a dressing of the mustard and vinegar. Beat the oil in a thin stream. Season with salt and pepper. Drain the potatoes and let them cool for 5 minutes. Mix with the dressing and let it cool slightly.

Season the potato salad with pepper and salt. Add extra vinegar and oil to taste. Mix the watercress by the potato salad and serve in a bowl.
