Heat the olive oil in a thick-bottomed frying pan and fry the shallots and garlic for about 2 minutes.

Cut the bacon into strips. Add half of the bacon strips to the shallot and garlic and fry them crispy. Add the risotto rice and fry it in 2 minutes.

Pour a large soup spoon of broth into the pan. Stir in the rice until the stock has boiled. Then add the peas, lemon zest and juice to the rice. Continue to add spoon for spoonful of broth.

Meanwhile, bake the rest of the bacon crisply in another frying pan.

Remove the pan from the heat source as soon as the rice is done and stir in the Parmesan cheese, parsley and butter. Serve with the fried bacon strips.
