Directions

  1. Make sure that all ingredients for the mayonnaise are at room temperature. Beat the egg yolk with a whisk or electric mixer with the mustard, 1 tablespoon lime juice, the lime zest, a pinch of salt and pepper to a smooth mixture.
  2. Pour in small amounts of oil until all the oil has run out and the mayonnaise has become thick and creamy.
  3. Add some lime juice to taste.
  4. Spread all the slices of bread with some lime mayonnaise and top with 4 lettuce and alfalfa. Divide the roast beef over it and cover with the other slices. Cut the sandwiches diagonally and serve immediately.
