Remove the roast beef from the refrigerator about 30 minutes before preparation and allow to reach room temperature.

Preheat the oven to 200ºC.

Melt the butter. Dab the roast beef dry and brush with the melted butter. Sprinkle with coarsely ground black pepper and salt.

Place the meat in a roasting pan and roast in the middle of the oven in about 25 minutes around brown and inside rosé. Turn over the roast beef halfway through the oven season.

Mix the rest of the melted butter with the cream, horseradish, mustard and 1 tablespoon of parsley.

Remove the roast beef from the oven and let it rest for 5 minutes under aluminum foil.

Heat the cooking fat with the horseradish cream mixture in a pan without cooking.

Cut the roast beef into slices on the wire of the meat and serve the sauce. Delicious with mashed potatoes or soufflé, sprouts and stewed pears.
