Cod fillet with haricots verts
A nice Mediterranean recipe. The main course contains the following ingredients: fish, Spanish giant canned beans, fresh haricots verts, lemons (scrubbed), onion, traditional olive oil, fresh cod fillet and garlic.
Preheat the oven to 180 ° C. Drain the beans. Clean the haricots verts and cook them for 4 min. Pour and put in the roasting pan.
Peel the yellow skin of the lemon and cut into thin strips. Squeeze out the fruit. Cut the onion into pieces.
Heat the oil in a frying pan and fry the onion for 3 minutes.
Cut the basil coarsely and half in the roasting pan with the onions, the lemon juice, the peel, beans, olives, fish stock, oil and pepper and possibly salt.
Dab the fish dry with kitchen paper and sprinkle with salt and pepper. Lay down with the skin between the vegetables. Bake in the oven for about 15 minutes until done.
Meanwhile, the nuts fine. Slice the garlic and mix with the nuts and the basil.
Remove the fish from the oven and sprinkle with the pistachio-basil mixture.
