Cut the mushrooms into strips. Heat 2 tablespoons of olive oil and stir-fry the mushrooms for 2-3 minutes.

Divide the roast beef over 4 large plates and sprinkle with the spring onions. Put a bunch of mushrooms in the middle.

Mix the rest of the olive oil with the nut oil and sprinkle over the mushrooms. Sprinkle with the cheese, walnuts and pepper.
