Roasted asparagus with smoked chicken
A tasty recipe. The starter contains the following ingredients: poultry, green asparagus, olive oil, shallots (finely chopped), balsamic vinegar, chilli pepper from the mill, smoked chicken fillet (cut into small cubes), sundried tomatoes (cut into small pieces) and fresh chives (finely chopped).
Preheat the oven to 225 ° C. Cut a 2 cm piece from the bottom of the asparagus. Peel the bottom of the asparagus if they feel somewhat dry or woody.
Place a piece of parchment paper on a baking sheet, place the asparagus on top and drizzle 2 tbsp olive oil over it. Sprinkle with salt and pepper to taste and cover everything well. Put the baking sheet in the middle of the oven and roast the asparagus in 15 minutes until golden brown and done.
In a bowl stir together the shallot and the vinegar and leave to marinate for 5 minutes. Beat the remaining 3 tbsp olive oil and salt and red pepper to taste through the vinegar. Spoon the chicken, tomato and chives through the dressing.
Divide the asparagus over 4 large warm plates and spoon over the dressing. Garnished with some leaves of rocket.
