Preheat the oven to 200 ° C. Peel the beets and cut into small parts. Place them on a griddle covered with parchment paper, keeping the 2 colors separate.

Spoon the segments with the caraway seed, the oil, some pepper and possibly salt. Roast for approx. 45 minutes in the middle of the oven. Change every 15 min.

Meanwhile, spray the leaves of the sprigs of thyme. Squeeze out the orange.

Mix the juice with the rest of the oil, the thyme and honey into a dressing. Season with pepper and salt.

Remove the beets from the oven and scoop on a flat dish. Sprinkle with the dressing and crumble the white cheese over it.
