Cook the rice. Preheat the oven to 200ºC.

Brush the chicken breasts around with 2 tablespoons of oil, place in a oven dish and grill in the oven for about 30 minutes until golden brown. Add the asparagus for the last 10 minutes.

In the meantime, season the herbs with the pepper, garlic, lime zest, juice, vinegar and the rest of the oil into a smooth sauce.

Pour this sauce over the chicken breasts and serve the roasted chicken with chimichurri with the asparagus and rice.
