Roasted chicory with chicken strips and noodles

Clean the chicory and cut it lengthwise. Remove the bitter core and cut the chicory into long, narrow strips.

Bring the water with salt to a boil in a pan and blanch the strips of chicory for half a minute, just enough to remove the remaining bitterness. Let the chicory subsequently drain in a colander.

Heat the olive oil in a frying pan and stir fry the chicken golden brown.

Add the mushrooms and chicory. Season with pepper, salt and chives.

Stir fry the to, add the icing sugar last and let it caramelize briefly.

Meanwhile, bring the noodles to the boil. Divide the noodles over the plates and stir in the stir-fried chicken, mushrooms, chicory and to add. Garnish with a tuft of parsley.
