Roasted potatoes with thyme and mandarin

Directions

  1. Preheat the oven to 200ºC.
  2. Clean the potatoes well under running water.
  3. Cook the potatoes in water with salt for 6-7 minutes. Drain and let dry. Halve the larger copies.
  4. Divide the potatoes over a baking tray and drizzle with half of the oil. Roast for 20-25 minutes in the oven.
  5. Mix the rest of the oil with the cloves of garlic and thyme.
  6. Peel the mandarin and squeeze the fruit over the seasoned oil.
  7. Drizzle the warm potatoes with the olive oil mixture and place small torn tangerine peels between them.
  8. Roast the potatoes for about 15 minutes in the oven and sprinkle before serving with sea salt.
