Preheat the oven to the grill setting. Spread the pieces of pumpkin over a baking pan and scoop them with the oil, salt and pepper, onion and garlic.
Pour a few spoonfuls of water around it and roast the pumpkin high in the oven for about 15 minutes brown and done.
Transfer everything into a pan and pour in the stock. Bring to the boil, simmer for 5 minutes and puree the soup.
Fry the slices of shiitake in a little oil on high sides on both sides brown.
Put the soup in plates and divide the shiitakes and sesame over it.
