Arrange the fennel on a vegetable slicer in wafer thin strips. Halve the strawberries.

Beat in a bowl a dressing of the vinegar with mustard, thyme leaves, oil and some salt and freshly ground pepper.

Spoon the bag of rucolamelange with the fennel strips and the strawberries lightly.
