Heat a grill pan on a high setting.

Spread the chicory with 1 tablespoon of oil and grill briefly until grill streaks appear.

Beat a dressing of the apple juice, honey, mustard, vinegar and rest of the oil and season with salt and pepper.

Divide the chicory over a bowl, add the apple wedges and pour the apple vinaigrette over it.

Crumble the goat cheese over the salad and sprinkle with the hazelnuts.
