Preheat the oven to 200ºC. Halve the sheets of filo dough and always put two sheets together. Spread the sheets generously with butter.

Crumble some goat's cheese in the middle of the dough sheet and fold the packet like a pouch. Fry the goat cheese packets in the oven for about 15 minutes until tender and golden brown.

In the meantime, beat a dressing of the balsamic vinegar, olive oil and honey. Spread the arugula on a plate or plates and add the raspberries, strawberries, to and red onion.

Allow the goat cheese packets to cool down until lukewarm and place them on the salad with red fruit. Drizzle with the dressing and serve immediately.
