Salad with smoked trout and apple
Fresh sweet salad with chicory, apple, smoked trout with a creamy dressing of lemon, chives and crème fraîche.

Slice the chives, squeeze the lemon and mix half of the juice with the crème fraîche and chives.

Season with pepper and salt. Keep separate.

Wash the apples, cut them into quarters, remove the core and cut the apples lengthwise into thin slices. Drizzle with the rest of the lemon juice.

Remove the leaves from the chicory and mix the apple with the chicory.

Divide the salad over the plates and divide the trout into pieces. Cut the rest of the lemon into pieces and serve with the dressing.
