Salmon from the oven with beets and lentils

Preheat the oven to 200ºC.

Mix the beetroot with the olive oil and garlic. Place the beetroot and salmon fillets on a baking tray and grill for 15 minutes in the oven. In between, switch over once.

In the meantime, mix the lentils with the onion, parsley and 2 tablespoons of balsamic vinegar. Season with salt and pepper.

Divide the lentils over 4 plates, place the beetroot on the lentils and then put the salmon on it. Drizzle with the rest of the balsamic.
