Salmon toucouce with butter sauce

Preheat the oven to 200ºC.

Place 8 sheets of filo pastry on the baking sheet, brush with melted butter and sprinkle with sesame seeds. Place a piece of dough on it again and make piles until all the sheets are gone.

Brush each layer with butter and sprinkle with sesame. Finish with butter and sesame and bake the dough in the oven in about 15 minutes until golden brown. Put 4 plates in the oven for the last 5 minutes.

Heat the sauce again and beat with a whisk the cold butter in small cubes through it into a smooth sauce. Take the pan from the heat source.

Put a filo cake on each plate and put 1/4 of the salmon tartare on it. Cover with a second filo crispy or put it against it. Drizzle with some butter sauce and serve immediately. Put the rest of the sauce on the table.
