Rub the pieces of salmon with the juice and some salt and freshly ground pepper.

Heat half of the butter in a frying pan and place the pieces of salmon in it.

Divide the spring onions, blackberries, lemon zest and oregano around them and sprinkle some salt and pepper over it.

Divide the remaining butter over the salmon and blackberries.

Put the lid on the pan and fry the salmon and blackberries on low heat for 10-12 minutes just until done.

Tasty with green beans and fried potatoes.
