Preheat the oven to 200 ° C. Grease the low oven dish. Grate and squeeze the lemon. Finely chop the parsley. Chop the onion. Peel the parsnip and cut into cubes. Peel the mandarins, loosen the wedges and cut the white skin around them with a sharp knife. Rub the salmon with salt, freshly ground pepper and lemon juice. Place the pieces of salmon with the skin down in the oven dish. Mix the parsley with lemon zest. Divide the segments of mandarin with the parsley mixture over the salmon. Let the salmon in the oven just about done in 20-25 minutes.

Heat the olive oil in a pan and gently fry the onion and parsnip. Pour in the milk and add some salt and pepper. Smother the parsnip covered in gently simmer for 15-20 minutes. Mash the parsnip with the pestle into a smooth puree. If necessary, allow a little reduction until the thickness is good. Serve the salmon with the parsnip puree.
