Grilled salmon with avocado mousse
Grilled salmon with a mousse of avocado, lemon, sour cream and chives.

Clean the lemon, grate the yellow skin (1 tsp per 4 persons) of the lemon and squeeze out the fruit.

Cut the avocado half in half. Remove the kernel and scoop out the flesh with a spoon from the peel. Cut the flesh into cubes.

Puree the avocado with the hand blender or in the food processor with half of the lemon juice and the sour cream.

Season with (freshly ground) salt and pepper.

Slice the chives. Then stir in half of the chives.

Heat the grill pan. Brush the salmon fillets thinly with the oil and grill the salmon fillets for 3 minutes each side until they are brown on the outside and rosé on the inside.

Drizzle the salmon fillets with the rest of the lemon juice. Season the fish with the lemon zest, pepper and salt.

Serve the salmon fillets with the avocado mousse and sprinkle the dish with the rest of the chives.
