Dab the fish fillets dry and sprinkle with lemon juice. Sprinkle the fish with salt and freshly ground pepper.

Place a slice of ham on each fillet with a leaf of sage on it. Stick with a stick.

Heat the oven grill. Heat the baked goods in a ovenproof frying pan and fry the fish with the sage at the top for 2 minutes.

Spread the slices of mozzarella over it and garnish under the hot grill. Grind a little pepper before serving.
