Cut the onions into half rings.

Heat the butter in a frying pan and fry the onions over low heat for about 30 minutes. Change regularly.

Add the sugar and vinegar to the onions after 15 minutes. Keep on shoving regularly.

After 25 minutes, add the thyme leaves and cook for another 5 minutes. Season with salt and pepper.

Sprinkle the entrecotes with the beef mix.

Heat the rest of the butter in a frying pan and fry the entrecotes for 3 minutes on a high heat rosé. Turn halfway.

Take the meat out of the pan and leave on a plate covered with aluminum foil for 5 minutes.

Serve the entrecotes with the caramelized onions.
