Grate the yellow skin of the lemon and squeeze out the fruit. Put the lemon zest, tuna, capers, mayonnaise and mustard in the food processor.

Season with lemon juice, pepper and salt and puree until smooth.

Toast the bread in the toaster. Divide the chicken fillet over half of the slices.

Cut the pickle into slices lengthwise. Divide the tuna sauce, arugula and pickle. Cover with the rest of the chicken fillet and the rest of the bread.

Cut the sandwiches diagonally in half.
