Roast the sausages on the barbecue. In the meantime, heat the oil in a frying pan and fry the shallot in it. Add the apple and caster sugar and cook for 5 minutes. Add the flour and cook for 2 minutes.

Add the mustard and broth and cook until the sauce has thickened. Put the arugula on plates and spread the sausages over it. Spoon the sauce over it and serve immediately.
