Directions

  1. Dab the cutlets dry with paper towels and sprinkle on one side with salt and pepper.
  2. Put them up with the unseasoned side up. Prepare the anchovy rolls with capers and spread this pasta over the schnitzels.
  3. Put a bunch of rocket on it and roll the cutlets tight. Secure them with a skewer or with a piece of rolladette rope.
  4. Heat the oil and fry the rolls around in about 10 minutes until the inside is cooked.
  5. Puree the tuna with the mayonnaise and the lemon juice into a smooth sauce and season with salt and pepper.
  6. Place a bunch of rocket on each plate. Cut the rolls into thick slices and spread them over the lettuce.
  7. Pour in the tuna mayonnaise. Tasty with pasta or freshly baked bread.
