Peel the pear and cut into segments.

Bring the sherry in a pan with the honey to the boil, dissolve the honey with stirring and let it boil for 2-3 minutes.

Put the wedges pear in the sherry and simmer for 4-5 minutes against the boil.

Remove the pear parts with a slotted spoon and let them drain on kitchen paper.

Let the water boil in 5 minutes until there are 3-4 tablespoons left and it starts to become syrupy.

Cut the crusts of the pieces of manchego and cut each piece into 8 dots.

Cut the slices of ham in half lengthwise. Put a tip of manchego on top, then 3 sprigs of chives and a wedge of pear. Roll up the slices.

Place the packages on a flat dish. Drop some sherry syrup and sprinkle generously with pepper. Bon appétit! .
