Sicilian pasta with tuna


Italian pasta with eggplant, garlic, vine tomatoes, raisins and tuna sprinkled with basil

Directions

  1. Cut the aubergine into cubes, the tomato into pieces and the garlic fine.
  2. Cook the pasta al dente according to the instructions on the package.
  3. Meanwhile, heat the oil in a frying pan and fry the eggplant for 2 minutes.
  4. Add the garlic, pour the tomato through and cook for another 5 minutes. Add the raisins and tuna and heat for 1 more minute.
  5. Drain the pasta and scoop through the vegetables. Add the leaves of the basil, pepper and possibly salt.
  6. Spoon the pasta into deep plates.
