Simple cheese fondue
Jamie Oliver's simple cheese fondue with three cheeses.

Chop the shallots very finely. Risp the leaves of the thyme.

Grate the Cheddar and the Gruyère. Crumble the blueface cheese.

Heat a pan with the olive oil.

While the pan is warming up, put another pan on the fire with a few cm of water and put a refractory bowl on it.

Put the shallots in the pan with the oil and the thyme leaves. Season with salt and pepper.

Bake for 5 min. On not too high a heat and then put it in the fireproof bowl with the cider and all the cheese.

Let the cheese melt in the bowl on low heat. Stir occasionally. Add the crème fraiche as the cheese begins to melt.

Stir through it and add a dash of hot water to loosen it.

Taste, season with salt and pepper, and prepare the ingredients for dipping.

Serve when the cheese mixture is melted.
