Directions

  1. Cut the onion into rings. Risp the thyme leaves from the twigs.
  2. Heat a large frying pan over medium heat. Put in the olive oil, butter, fennel seeds and the onion rings.
  3. Add the thyme leaves and fry the mixture with occasional stirring for about 15 minutes or until the onion is soft and begins to caramelize.
  4. In the meantime cut the red cabbage into parts. Add the red cabbage and stock.
  5. Bring to the boil, turn the heat down to medium-low, put the lid on the pan and fry for 30 minutes until the coal has almost completely softened.
  6. Turn the heat up to medium-high and add the balsamic vinegar.
  7. Allow the liquid to boil for about 10 minutes with occasional stirring until almost all liquid has evaporated and the coal has become soft and deliciously sweet.
  8. Taste and if necessary season with salt and pepper. Spoon the red cabbage in a nice serving dish.
