Ingredients
Directions
-
Cut the onion into rings. Risp the thyme leaves from the twigs.
-
Heat a large frying pan over medium heat. Put in the olive oil, butter, fennel seeds and the onion rings.
-
Add the thyme leaves and fry the mixture with occasional stirring for about 15 minutes or until the onion is soft and begins to caramelize.
-
In the meantime cut the red cabbage into parts. Add the red cabbage and stock.
-
Bring to the boil, turn the heat down to medium-low, put the lid on the pan and fry for 30 minutes until the coal has almost completely softened.
-
Turn the heat up to medium-high and add the balsamic vinegar.
-
Allow the liquid to boil for about 10 minutes with occasional stirring until almost all liquid has evaporated and the coal has become soft and deliciously sweet.
-
Taste and if necessary season with salt and pepper. Spoon the red cabbage in a nice serving dish.
