A delicious scandinavian recipe. The snack contains the following ingredients: fish, red onion (very finely chopped), white wine vinegar, potatoes (firm, peeled), low-fat yogurt, halvanaise, chives ((a 25 g), very finely chopped), Frisian rye bread (box of 10 slices), smoked salmon (sandwich slices, packet of 100 g) and cress.

Directions

  1. Mix the onion with the vinegar and a pinch of salt. Keep separate. Bring a small pan of water to the boil. Meanwhile, cut the potatoes into cubes of 1/2 x 1/2 cm (brunoise). Add some salt to the boiling water and boil the potatoes in 4 minutes until al dente. Drain and let them cool for 5 minutes.
  2. Mix the yogurt with the halvanaise, chives, potato and the onion vinegar mixture. Season with salt and pepper.
  3. Cut the slices of rye bread into 4 pieces each. Divide the potato salad over the slices. Cut the salmon into 6 equal slices and place on 6 of the pieces of rye bread. Garnish the 6 rye rolls without salmon with cress. Put the rolls on and on a plate.
