Soft oatmeal cookies with banana, apricot and coconut

Preheat the oven to 180ºC.

Mix the flour with wholemeal flour, baking powder, sugar, oatmeal and a pinch of salt in a large bowl.

Add the butter, eggs and banana and knead together with a cool hand. Mix in the apricot and coconut. Stick the dough on your hands. Then add some extra oatmeal.

Divide the dough into about 14 balls and place them with enough space on the baking sheet. Press the balls a little flat and bake golden brown in the oven for 10-12 minutes.

Allow to cool down on a rack so that the oatmeal cookies become slightly firmer.
