Directions

  1. Preheat the oven to 200ºC.
  2. Place the to in a baking dish or on a baking tray and drizzle with half of the olive oil. Sprinkle with salt and pepper and put in the oven for about 15 minutes.
  3. Meanwhile, bake the bacon cubes lightly crispy in a dry, hot frying pan and add the garlic. Cook the spaghetti according to the instructions on the package.
  4. Beat the eggs and stir in the cheese, a little pepper and nutmeg through it. Drain the spaghetti, collect some cooking water and put the pasta back in the pan.
  5. Scoop the egg mixture through and continue stirring well until a creamy sauce is formed. Add some extra cooking water if the whole is too dry and let it rest for a while.
  6. Mix the bacon, roasted to and parsley with the spaghetti carbonara.
