Steak salad with avocado chimichurri dressing


Fresh salad of leaf lettuce with arugula and avocado, onion, steaks, snow peas and romans.

Directions

  1. Squeeze out the lime. Cut the avocado half in half, remove the kernel and scoop out the peel with a spoon.
  2. Put half of the avocado with the chimichurri herbs, the oil, the water and a ½ tsp of lime juice in a tall cup.
  3. Puree with the hand blender to a smooth dressing. Season with pepper and salt.
  4. Cut the other half of the avocado into slices in width. Cut the onion into rings.
  5. Heat the rest of the oil in a frying pan. Sprinkle the steaks with pepper and salt and fry with the onion rings for 5 min. On medium heat.
  6. Turn halfway. Remove the steaks from the pan and keep warm under aluminum foil.
  7. Meanwhile, cook the snow peas for 5 minutes and cut the tomatoes into quarters.
  8. Divide the lettuce over a dish and divide the avocado, red onion, snow peas and tomatoes. Cut the steak into thin slices.
  9. Sprinkle with the dressing. Cut the ciabattina's into slices and serve.
