Spareribs with onion marmalade

Make sure the spareribs are at room temperature. Chop the onion, finely chop the garlic and grate the ginger.

Heat the olive oil in a pan with a thick bottom. Smother the onion with garlic covered in ten minutes very soft glassy.

Stir in the ginger, thyme, balsamic vinegar, sugar, salt and freshly ground black pepper.

Cook over a very low heat in 10-20 minutes until a nice marmalade, stir regularly.

Toast the spareribs on a hot barbecue in 20-30 minutes nicely browned and cooked, turn them regularly.

Cut off the ribs and serve with onion marmalade.
