Boil the eggs hard in 8 minutes. Scare under cold water, peel them and cut them into pieces.

Drain the anchovy fillet and cut finely. Slice the garlic. Mix with the mustard and the vinegar.

Add the olive oil while beating and season with salt and pepper.

Put the flour in a deep plate. Beat the last egg in another deep plate with some water.

Sprinkle the breadcrumbs on a third plate. Sprinkle the chicken with salt and pepper and swirl them sequentially through the flour, egg and breadcrumbs.

Heat the sunflower oil in a frying pan and fry the chicken over medium heat in about 4 minutes until golden brown.

Spoon the spinach with the egg and the dressing. Serve with the chicken.
