Cut the onion into rings. Heat the butter in a pan and fry the onion for 10 minutes on low heat.

Add the sugar and vinegar and season with salt and pepper. Leave to simmer for 10 minutes on low heat. Allow the onions to cool.

Meanwhile, mix the mayonnaise with the horseradish and season with salt and pepper.

Cut the spelled balls in half and spread the bottom halves with the horseradish mayonnaise.

Divide the lamb's lettuce, sausage and caramelised onion in succession. Place the top halves on top and serve immediately.
